TampTamp Cuppings 1/19/10 and 1/26/10

So I forgot to write the blog post for last week’s cupping, but that’s okay because this week we cupped one of the coffees again and found some interesting results, so I get to share them with you here. So last week, we had 3 coffees. 2 from Dallis Coffee and 1 from Flat Black Coffee Co.

#1 Dallis Coffee’s Brazil Organic

  • Dry: Chocolate, clove, black tea, nutty, sweet, citrus, vanilla
  • Wet: red delicious apple, citrusy, fruit, sweet
  • Break: caramel, chocolate, sweet
  • Brightness: green apple, medium, pleasant
  • Flavor: black tea, chocolate, spicy, chestnut, orange zest, peach
  • Body: medium light, 2% milk
  • Aftertaste: dry, chestnut, sweet on cool

#2 Dallis Coffee’s Sumatra Fair Trade Organic

  • Dry: orange, hibiscus, milk chocolate, spicy, peppery, bright, citrus, sour/fermented.
  • Wet: orange, eucalyptus, nutty, fermenty
  • Break: medicinal, floral,fruity, orange
  • Brightness: medium/grapefruit
  • Flavor: brown sugar, wine, green pepper, grassy, spicy, fermented, grapefruit
  • Body: juicy, light
  • Aftertaste: sweet, pleasant, sour/tangy

#3 Flat Black’s Costa Rican La Minita Estate French Roast

  • Dry: bitter chocolate, cherry, sweet chocolate, musty
  • Wet: alkaline, tree bark, cherry
  • Break: fruity, smoky, leather, sweetness
  • Brightness: low-medium
  • Flavor: bitterweet chocolate (x3), smoky, burnt chocolate, smoked almonds
  • Body: heaviest
  • Aftertaste: lingering bitter, woody, tangy then smoky

This week we had coffee from three different roasters: Dallis Coffee, Intelligentsia and Stumptown

#1 Dallis Coffee’s Sumatra Fair Trade Organic (same bag as last week)

  • Dry: Plum, beer, chocolate, raisins, roasted red pepper, spicy chilis
  • Wet/break: rose, bbq, dark chocolate, smoked paprika, cumin, musk, cantaloupe
  • Brightness: unexpectedly bright
  • Flavor: sour apple, cantaloupe, plum, chocolate, fermented, orange, nutty, sour, red pepper, cucumber, carrots
  • Body: light-medium
  • Aftertaste: chocolatey, sweet pleasant, milk chocolate, clean

#2 Intelligentsia’s Ethiopian Yirgacheffe

  • Dry: macerated strawberries, berry pie, honey, sweet cinnamon, berries, anise (licorice)
  • Wet/break: honey, black licorice, pie filling, pie spices, candy
  • Brightness: high, pleasant
  • Flavor: black tea, honey, strawberry, currant, chocolate, cashews, fennel, sweet, floral, jasmine tea
  • Body: milky, full
  • Aftertaste: sour, cinnamon, lingering cashews

#3 Ethiopia Mordecofe (no longer available online)

  • Dry: grape soda, chocolate, blueberry muffin, brown sugar
  • Wet/break: jasmine tea, blueberry, almond, cinnamon, clove, cherry, grapes
  • Brightness: very high
  • Flavor: grape soda, alcohol, very fruity, dried peanuts, fruit, berry, apples, settles to sweet
  • Body: light
  • Aftertaste: clean, lingering berry, dry back of mouth, orange and apples
